Food for Fuel: Tuna Tapenade and a Super Seed

I made this for dinner two nights ago and it is just now making its blog appearance. I apologize; I’ve been away from my computer a lot. Anyway, on Friday Geno fixed the bathroom doorknob and got my lawnmower to start, so he was rewarded with a new recipe. The Tuna Tapenade was delicious and an incredibly easy way to make a fancy-looking fish dinner, especially since I bought frozen tuna steaks in a package of two.

On the side we had quinoa, which is usually considered a grain but is apparently a seed related to spinach (odd). I often use it as a substitute for rice. It’s pretty much a perfect food–packed with protein, carbs, iron, and lots of other vitamins/minerals. I also roasted asparagus and mushrooms seasoned with salt and pepper and then spread with a little fat free Promise, balsamic vinegar, and soy sauce when they came out of the oven. Brownies for dessert, of course.
