Food for Fuel: Italian Omelette

I think that tonight’s dinner is going to be something leftover in the freezer, so I will share my lunch instead. Omelettes are incredibly good fuel, especially when packed with veggies. The protein also makes them great for muscle recovery.

I made mine with “Italian” flavors, using the following ingredients:

  • 1 egg and 1/3 cup egg whites
  • Minced garlic (just a little of the jarred kind)
  • Red bell pepper
  • Baby spinach
  • Red onion
  • Mushrooms
  • 2 olives
  • Fat free mozzarella
  • Parmesan
  • Pepperoncini peppers

It was a delicious combo, although you can probably tell from the picture that I am not a good omelette-flipper. On the side I had a piece of German fitness bread and an orange.

This meal provides 10 (wow!) ingredients from the World’s Healthiest Foods list:

  • Eggs
  • Bell peppers
  • Garlic
  • Onions
  • Spinach
  • Mushrooms
  • Olives
  • Low-fat cheese
  • Whole wheat
  • Orange

It has some from the Best Foods for Runners list as well, but in the name of simplicity and because it’s a short list, I’ve decided to stop counting that one. It’s still a good list and I’ll leave the link in my sidebar for reference.
