For tonight’s dinner, I took a break from The Runner’s Cookbook to try this tempting eggplant dish. After all, track doesn’t start until Friday! This recipe was wonderful, and I’m so glad I have leftovers. I’m thinking of trying it with fish later in the week.
I halved the recipe and did not add the anchovy, but did add olives and basil. I cooked a chicken breast on the George Foreman, tossed everything with some whole wheat linguine, and topped it all with feta.
