Food for Fuel: Shrimp Fajitas

Last night I had a craving for Mexican food, which I believe was triggered by the queso that MSB and I made on Sunday night. (By “made” I mean microwaving Velveeta and adding jarred salsa.) I also wanted to try a new recipe, so I made Border-Style Shrimp, added plentiful veggies, and filled up some La Tortilla Factory 100% whole wheat tortillas. This is a great shrimp recipe, but I think I added too much chili powder because it was very spicy!

I added red and green bell peppers and mushrooms to the pan and tomatoes at the end. I also added a small amount of black beans that I had left over, and lots of a reduced-fat bagged Mexican blend of cheese. After I took this picture, I covered the fajitas in mixed greens.

This was so good! Sometimes the simplest meals are also the tastiest. This is also a little healthier than Velveeta. 😉 I’ve been zooming in a more for the pictures. Is this better or worse? It definitely makes my meals look huge, that’s for sure!
