Food for Fuel: Italian Chicken Sub

I always seem to be busier on Thursday evenings. I think it’s from lifting weights after work, and lately I’ve also been doing laundry to get it out of the way before the weekend (because MSB is coming today!). So, dinner usually has to be quick, and last night I thought, “this is totally not going to be a blog-worthy meal,” but it was indeed!

I buy all-natural frozen French baguettes because they’re convenient once in a while and they are delicious once heated in the oven. I had one tiny piece of chicken left, so I made a sub using my favorite jarred sauce, chicken, red bell pepper, red onion, sliced Kalamata olives, pepperoncini peppers, and sliced tomato. I topped it with both fresh mozzarella and bagged fat free mozzarella.


On the side I had roasted asparagus (yes, a lot this week) with olive oil, kosher salt, and minced garlic, and a little more sauce for dipping. It was so, so good. Those naughty refined carbs really hit the spot.

  1. Does MSB cook or enjoy putting meals together? Or do you always take the lead with that? How far away do you guys live from each other? I’m so lucky that Elliot and I are basically neighbors and we’re starting to talk about moving in together when his lease is up (*gasp*! i never thought i’d move in with anyone… i’m so particular about living environment hehe). but i also know how challenging distance relationships can be, even if you are only 2 hrs from each other, it’s still far enough. i have to say i NEVER get tired of seeing your food creations!! so thanks for that 🙂 and did you see TFH’s blog?! 🙂 yay 🙂 one last thing, CRAZY about the ballet background!!!!! that takes a lot of seriousness huh? i thought i was going to the olympics as a gymnast but turns out you have to be like 3 to do that. so as a accident-prone, not so graceful ten year old, i was living a lie 🙂 hahahaha. thank gosh for marathon dreams!

  4. Lacey: I suspect that MSB can cook because both his parents are excellent cooks, however, he’s quite lazy about it and eats a lot of convenience foods like frozen pizza. He can make a mean turkey sandwich. We live almost 3 hours from each other. So nice that you live near Elliot! And I started ballet too late as well.
