Food for Fuel: Spicy Soba Stir Fry

Last night I dreamed that I was eating Chinese food. I think my dinner was to blame. Last night’s dinner looked a lot like this one, but the sauce is different and it has a catchier name, so I will share it anyway. Last night I created another soba noodle and baked tofu one-bowl meal, using the same method for baking tofu as in the above linked recipe (if you don’t like spicy food, use the linked recipe, not this one). You can also pan-fry the tofu or just throw it in with the veggies, which would make this an extremely quick meal.

I combined the following veggies in my skillet:

  • Frozen Asian blend
  • Mushrooms
  • Edamame

Along with:

  • ~1/2 Tb minced ginger
  • <1 tsp. jarred minced garlic
  • 1 Tb reduced sodium soy sauce
  • <1 tsp. chile-garlic sauce

After the tofu finished baking, I added about 1/2 a block. I combined the contents of the skillet with the cooked soba noodles and bulked it all up with spaghetti squash. I stirred in fresh cilantro at the end.

  1. Oh I really like the idea of using the soba and the spaghetti squash together… I like the “squash as noodle” thing but I need some real noodles in there, too, you know?

    Anyway, that looks mighty tasty (and good-for-you too)
