Food for Fuel: Pumpkin Apple Butter

I tried a new recipe last Sunday and never posted it, but I’ve been enjoying it all week. I found the Pumpkin Apple Butter recipe link on Tri to Cook’s blog, and I’ve been spreading it on pumpkin chocolate chip muffins and stirring it into oatmeal. The recipe made a lot for just one person, so I’m also going to use it as a gift.


Ok, so it may have splattered on my stove a bit while simmering, but it did make the house smell nice, so it was worth it. 🙂


 Mmmm…pumpkin on top of pumpkin. That should make me run extra fast.

  • Apples
  • Winter squash (pumpkin)
  • Ginger
  • Honey

Four ingredients is almost all of them in this easy recipe.

  2. Hmmm, maybe I should mix my applesauce and pumpkin together for a snack! I bought a HUGE can of pumpkin and opened it a couple days ago not realizing that I need to eat it ALL by Wednesday before I head home for 2 weeks. I might turn orange.
